Citric acid is a weak organic acid that has the chemical formula C6H8O7. It occurs naturally in citrus fruits. In biochemistry, it is an intermediate in the citric acid cycle, which occurs in the metabolism of all aerobic organisms.

Citric acid exists in greater than trace amounts in a variety of fruits and vegetables, most notably citrus fruits.^[8] Lemons and limes have particularly high concentrations of the acid; it can constitute as much as 8% of the dry weight of these fruits (about 47 g/l in the juices^[9]).^[a] The concentrations of citric acid in citrus fruits range from 0.005 mol/L for oranges and grapefruits to 0.30 mol/L in lemons and limes. Within species, these values vary depending on the cultivar and the circumstances in which the fruit was grown.

• Food preservative: Sodium benzoate is a white crystalline or amorphous powder that is used to prevent the growth of mold and yeast in acidic foods and beverages. It's commonly used in foods like jams, pickles, fruit juices, salad dressings, and carbonated drinks. 
• Corrosion inhibitor: Sodium benzoate is used as a corrosion inhibitor. 
• Fragrance: Sodium benzoate is used as a fragrance. 

• Food: Potassium sorbate is used to prevent the growth of microorganisms like yeast, mold, and bacteria, which increases the shelf life of food. It's often used in combination with other acids, like citric or ascorbic acid, to achieve an acidic pH value. Some foods that commonly use potassium sorbate include meat substitutes, sauces, marinades, jams, spreads, yogurt, dried fruit, beverages, margarine, baked goods, and mayonnaise.
