Citric Acid is a weak nature organic acid having the formula as C6H8O7. Citric Acid is a natural preservative which is found in citrus fruits and is also used to add a sour taste to foods and drinks. Citric acid is commonly used as an acidifier, a chelating agent and a descaler.

• Food preservative: Sodium benzoate is a white crystalline or amorphous powder that is used to prevent the growth of mold and yeast in acidic foods and beverages. It's commonly used in foods like jams, pickles, fruit juices, salad dressings, and carbonated drinks. 
• Corrosion inhibitor: Sodium benzoate is used as a corrosion inhibitor. 
• Fragrance: Sodium benzoate is used as a fragrance. 

• Food: Potassium sorbate is used to prevent the growth of microorganisms like yeast, mold, and bacteria, which increases the shelf life of food. It's often used in combination with other acids, like citric or ascorbic acid, to achieve an acidic pH value. Some foods that commonly use potassium sorbate include meat substitutes, sauces, marinades, jams, spreads, yogurt, dried fruit, beverages, margarine, baked goods, and mayonnaise.
